No-Bake Cookie Balls Recipe - Gluten-free, Raw, & Vegetarian, by Nancy Addison, Organic Healthy Life

Recently I volunteer taught cooking classes for children at the local library summer camp. They had so much fun making these healthy cookies. They were absolutely delicious! These are more healthy than most health food bars.

This is an easy recipe that takes about 10 min. to make. I use only organic ingredients. This recipe yields about twenty-five 1-inch cookie dough balls.

Ingredients:

1 cup old-fashioned oats

1/2 cup semi-sweet chocolate chips

1/2 cup unsweetened coconut flakes

1/2 cup ground flax seed

1/2 cup peanut butter or sun butter

1/3 cup raw, unrefined honey

1 tablespoon chia or hemp seeds

1 teaspoon pure vanilla extract

Dye-free sprinkles, for rolling

1 tsp. mineral-rich pink salt (Himalayan or Real are good choices)

Directions

1. Place the oats, chocolate chips, coconut flakes, flaxseed, peanut butter, honey, chia seeds, pink salt, and vanilla in a food processor and pulse until thoroughly combined or you can have the children combine it in a bowl, which is really fun for them.

2. Scoop the dough with a small ice cream scoop then use your hands to roll the mixture into 1-inch balls. Roll each ball in the sprinkles. Serve or refrigerate in an airtight container.
