<p><span style="font-size: 100%;">In honor of mother&#8217;s day, there may be someone making brunch for their mother today.</span></p>
<p><span style="font-size: 100%;">This is a recipe my daughter and I made together. Whole Grain Quinoa Waffles I grew up eating waffles; so I always made them for my children. Quinoa is a seed, not a grain. It is </span>gluten-free<span style="font-size: 100%;"> and a complete protein. Amanda also wanted to add some dried cranberries to the batter. They were delicious </span>in <span style="font-size: 100%;">our waffles. The cranberries are optional. We just added about a ¼ cup of them to our batter. I am going to share this delicious recipe with you.</span></p>
<p><span style="font-size: large;"><span style="font-size: 100%;"> Ingredients for about 3 (9-inch) waffles</span> </span></p>
<p>2 cups whole grain quinoa flour (sifted)</p>
<p>2 T. Xylitol (a natural sugar I like to use when the recipe calls for granulated sugar)</p>
<p>3 tsp. Baking Powder (with no aluminum)</p>
<p>¾ tsp. Sea Salt</p>
<p>1 ½ cups Coconut Milk</p>
<p>3 Eggs (separated)</p>
<p>¼ cup Coconut Oil (melted)</p>
<p>¼ cup Dried Cranberries (optional)</p>
<p>Dash Cinnamon (optional)</p>
<p>Drizzle Honey or maple syrup (optional)</p>
<p>A few tablespoons of melted butter (optional)</p>
<p><span style="font-size: large;">Directions:</span></p>
<p>1. Heat up the waffle iron</p>
<p>2. Sift the flour, sugar, baking powder and salt into a bowl.</p>
<p>3. Combine milk and egg yolks and beat in the coconut oil.</p>
<p>4. Add the liquid ingredients to the dry ingredients and stir lightly.</p>
<p>5. Beat the egg whites until they will form soft peaks.</p>
<p>6. Fold the egg whites into the batter.</p>
<p>7. Bake the waffles for about 5 minutes. ( time may vary with various waffle irons)</p>
<p>8. Serve with melted butter (optional), honey or maple syrup with a dash of cinnamon (optional) sprinkled on top.</p>
<p>Variations:</p>
<p>1.Add about ¼ cup of blueberries or banana pieces instead of the cranberries, to the batter for a fruitier version.</p>

This book easily puts the fundamental concepts into one place that anyone can understand and utilize. The recipes are tasty and can be made with relative ease.<br />

<strong>&#8220;How To Be A Healthy Vegetarian&#8221; is an excellent book. Having had the opportunity to assist and promote health and nutrition with world-class athletes over the last 25 years; it is my opinion that Nancy Addison&#8217;s book is a formula for high-level performance in our daily lives. I can&#8217;t imagine a more informative book for the person looking to improve their health.</strong> The chapter about sugar is the most complete information available. Nancy is an expert in Nutrition. What you put on the end of your fork is more powerful medicine than anything you will find at the bottom of a pill bottle.&#8221;</p>

<p><strong>Two years ago I had a quadruple bi-pass, and my cardiologist told me that if I changed to a plant based diet, I would never have this problem again. Being from Texas, I grew up on meat and potatoes, and I was not compliant with his advice. I came across Nancy Addison&#8217;s book and it made perfect sense to me with the simple and understandable approach. I&#8217;m started off dropping all animal meat, including chicken, which has as much unhealthy fat as steak. Within a month I dropped 17 lbs, just doing that. My system is functioning a lot better, I&#8217;ve added more fruits and vegetables, and doubled my energy. I haven&#8217;t given up seafood, but maybe down the road I will take the next step. Brava Nancy for getting me to take the first step,and helping me create a new,healthier life!!!!!</p>

The thing I love about this book is it is clearly written and easy to understand! I&#8217;ve purchased so many books in the past that were supposed to be written for beginners in the vegetarian lifestyle, but ended up being geared toward people who were either scientists or well versed in what vegetarianism entails (when that was not what I was looking for or how it was marketed) and they didn&#8217;t do me much good! BUT <strong>THIS BOOK IS THE REAL DEAL! Reading it made me feel like the writer was personally guiding me through the things that are important for me to know. And it is full of a whole bunch of great (and easy) recipes too!</strong> I know several teens in my family who are experimenting with vegetarianism and I will be purchasing several copies of this book, so they will learn to do it in the right way from the beginning. Actually, it would make a great gift for anyone thinking about trying to become a little healthier by incorporating a few more vegies into their diet!&#8221;</p>

This is a wonderful book. This information and recipes that Nancy has included was instrumental in getting back on the path of being healthy. Me being a vegetarian, well honestly I&#8217;m not all there yet&#8230; but I&#8217;m not done yet.<br />
It&#8217;s still a challenge, but after reading her book, I am making better choices in food that I do eat. Using the choices and new recipes has and is instrumental in my weight loss too. It&#8217;s a great lifestyle change book and she goes in depth explanation of the benefits why we should change our diet.</p>
<p>I&#8217;ve been known carried this book into the groceries stores with me when I have shop. I buy organic foods and most of its all vegetables and then learning how to prepare them. It&#8217;s all in the book.</p>
<p>Our most important asset is our body and our health. So we need to get serious and Nancy puts in easy reading form what we need and how it works and how to do it.</p>

<p>Celebration Magazine has a new health and nutrition column and it is written by Chef and Nutrition Expert Nancy Addison and Academy Award-Winning<br />
Documentary Filmmaker, Maryann De Leo. They recently released their book, Alive<br />
and Cooking &#8211; An Easy Guide to Health for You and Your Parents, which<br />
provides more than 100 easy, healthful, and budget-friendly recipes,<br />
health tips and shopping resource guide to aid all in creating a<br />
nutritional plan best suited for older adults.</p>
<p>What a great month to start our column!  The month we celebrate love,<br />
cooking is love &#8211; expressed through food.</p>
<p>Leeann Lavin, who wrote the forward to our book, said, “Food is love.&#8221;</p>
<p>We could not agree more! We’d like to think as food as the celebration<br />
of life and love!</p>

										<content:encoded><![CDATA[<p><span style="font-size: medium;">I was reading the other day about “clean eating.” </span></p>
<p><span style="font-size: medium;">My client had asked me, if I knew what it was and I really didn’t. </span><span style="font-size: medium;">I supposed it is certainly better than eating dirty food! So, I looked it up on line. </span></p>
<p><span style="font-size: medium;">Apparently it is a term used for non-processed or “fast” food. I guess it is making a come back because a lady, wrote a book for “idiots.” And their guide to eating “clean.” It is a term that has caught the buzz. </span></p>
<p><span style="font-size: medium;">Now there are magazines and websites about eating clean The Clean food movement looks like a good movement. It is a movement that was started over the moral values of the times in the sixty’s, when I grew up. </span></p>
<p><span style="font-size: medium;">Much of what I talk about in my book and really why I became an organic proponent and vegetarian in the first place is because of the amazing amounts of chemicals and preservatives that are added to food at restaurants and packaging plants; as well as the inhumane treatment of these precious, living creatures. </span></p>
<p><span style="font-size: medium;">The “clean eaters’ support eating whole, real food. Makes sense to me! As people have gotten sicker and sicker from eating processed foods filled with additives, preservatives, flavor enhancers, as well as antibiotics and hormones; as a last resort they have turned to focusing on what they put in their mouth. </span></p>
<p><span style="font-size: medium;">I know changing what we eat can be really difficult, but when we stick with it for at least two weeks to ninety days, we can regenerate our tastes buds and really made a shift to the new lifestyle, even in our way of thinking. From what I can find on-line, the “Clean Food” movement says they have 7 principles. So, let’s look at those.</span></p>
<p><span style="font-size: medium;"> Number 1. Eat whole, natural foods and seek to eliminate or minimize processed foods. Well, that is admirable. But watch out for the word “natural.” It can be totally chemically derived and be legally called natural by FDA standards.</span></p>
<p><span style="font-size: medium;"> Number 2, They say to choose unrefined instead of refined foods. That sounds good.</span></p>
<p><span style="font-size: medium;">Number 3. Include some protein, carbohydrates and fat at every meal. That sounds good as well.</span></p>
<p><span style="font-size: medium;">Number 4: Watch out for fat, salt and sugar. That is good concept. But really, what you should look for is what kind of fat, salt and sugar it is. So many of these are really not good, but the healthy alternative can be extremely beneficial. I wrote really long chapters on the types of fats, sugars, and salts there are to choose from. I think quality is paramount.</span></p>
<p><span style="font-size: medium;">Number 5 They say to eat six small meals throughout the day. I personally disagree with this. This can create weight problems and digestive problems in my opinion.</span></p>
<p><span style="font-size: medium;">Number 6 They say not to drink your calories. The basic thought is good, but some of the suggestions for drinks are not a healthy choice in my own personal opinion. I think they can cause allergies and weight gain.</span></p>
<p><span style="font-size: medium;"> I am not into counting calories. I don’t do it. I think it is really an outdated mode of eating, because it doesn’t take into account the quality of the food as compared the quality of the other food. Calories for white refined flour are the same as calories for whole- grained, organic flour. I don’t believe it is as relevant and people think. I think it also makes eating so much more complicated. I don’t think eating healthy food should be complicated.</span></p>
<p><span style="font-size: medium;"> Number 7 is to get moving. Well, how can anyone argue with that? Good suggestion.</span></p>
<p><span style="font-size: medium;">Well, in conclusion, if you are a clean eater, I would say you are much better off than you might have been previously, assuming you were eating a lot of fast and processed foods and leading a sedentary lifestyle.</span></p>
