<p><span style="color: #000080;">Today is Father&#8217;s Day.</span></p>
<p><span style="color: #000080;">My father had heart disease. The picture above,  is a picture of him with my daughter and my mother. I miss him.</span></p>
<p><span style="color: #000080;">Heart Disease is the leading cause of death of men in the United States. Over 307, 225 deaths per year of men in the United States, that is 1 in every 4 male deaths. Half of the men who die suddenly have had no previous symptoms. Heart disease kills 1,100 women a day. One in every 4 deaths a year are from heart disease. My own father had a heart attach when I was in college. He survived it, but I don&#8217;t think he ever fully recovered. That was a major reason that I changed the way I eat and live. Because of this being Father&#8217;s Day, I am going to address heart disease.</span></p>
<p><span style="color: #000080;">I’m a vegetarian and wrote the book, “<a style="color: #000080;" href="&lt;iframe style=&quot;width:120px;height:240px;&quot; marginwidth=&quot;0&quot; marginheight=&quot;0&quot; scrolling=&quot;no&quot; frameborder=&quot;0&quot; src=&quot;//ws-na.amazon-adsystem.com/widgets/q?ServiceVersion=20070822&amp;OneJS=1&amp;Operation=GetAdHtml&amp;MarketPlace=US&amp;source=ac&amp;ref=qf_sp_asin_til&amp;ad_type=product_link&amp;" data-wpel-link="internal">How To Be A Healthy Vegetarian</a>.”  I have been a vegetarian for over 27 years, because I had a great many family members die of heart disease, strokes and cancer. So, honoring him today, I thought I would discuss this briefly.</span></p>
<p><span style="color: #000080;">Years ago, I took a Cornell University course on the plant-based diet. Dr. T. Colin Campbell, who participated in the China Study and wrote “The China Study” and Dr. Caldwell B. Esselstyn, Jr. M. D. who wrote “Prevent and Reverse Heart Disease” were two of the professors that taught the course.</span></p>
<p><span style="color: #000080;">Dr. T. Colin Campbell as well as Dr. Caldwell B. Esselstyn (a former surgeon, researcher and clinician at the Cleveland Clinic, -known as the number one heart clinic in the world) believes that by changing the diet, heart disease can be completely cured and prevented.  In our class Dr. Esselstyn explained that cardiology has only focused on treating the symptoms and not the cause.</span></p>
<p><span style="color: #000080;">Dr. Esselstyn explained that a plant-based diet with only a minimum of limited/low healthy fats can not only prevent and stop progression of heart disease, but also reverse it. He explained that his scientific studies show with irrefutable scientific evidence that by changing to a plant based diet, heart disease can be prevented and the epidemic eradicated.</span></p>
<p><span style="color: #000080;">His drew evidence in his results testing with his own patients. He taught that despite the treatments the patients had already received, like bypass surgery or angioplasties, 5 of the original group of 17 had been told by their physicians that they would probably only have about a year to live.  Of the group of 17, there had been at least 49 cardiac events leading up to this study.</span></p>
<p><span style="color: #000080;">Dr. Esselstyn’s 20 year clinical study comprised of 17 compliant patients on his plant based/low fat diet program the health improvement was dramatic. The patients cholesterol dropped, their anginia symptoms and blood flow improved dramatically. Within the 12 years, his 17 patients had no further cardiac events. The patients that stuck with the program survived beyond 20 years, free of symptoms. Anglograms taken of the patients showed a widening of the coronary arteries thus, a reversal of the disease. This study showed one of the most profound drop in cholesterol ever documented in a medical study.</span></p>
<p><span style="color: #000080;">So, if you think that heart disease just happens and that there is nothing you can do about it, then try switching to a plant based / low fat diet and see if that would work for you. It is a lot easier than you think. It just takes a new mindset, a few guide-lines, good recipes and a will to do it.</span></p>
<p><span style="color: #000080;">Last year was my 40<sup>th</sup> high school reunion. One of my classmates who had heart disease was told by his physician, that if he switched to a plant based diet he would never have to worry about having a heart attack again. He bought my book and has made some changes to move toward a plant-based diet.</span></p>

<p><span style="color: #000080;">“Two years ago I had a quadruple bi-pass, and my cardiologist told me that if I changed to a plant based diet, I would never have this problem again. Being from Texas, I grew up on meat and potatoes, and I was not compliant with his advice. I came across Nancy Addison’s book and it made perfect sense to me with the simple and understandable approach. I’m started off dropping all animal meat, including chicken, which has as much unhealthy fat as steak. Within a month I dropped 17 lbs, just doing that. 										<content:encoded><![CDATA[<p>Do you ever wonder, what is in the food that you eat?</p>
<p>The information you read on labels should have to tell you what kind of ingredients are in the product. I always buy certified organic, when I can. Even if it is fresh, whole food, I want to know, if it is genetically modified for one thing. Certified organic used to mean that it was “not” from genetically modified seeds.</p>
<p>The certified organic has been watered down so much, that they have more and more (over 250) non-organic ingredients that can be added to them, as well as foods from genetically modified seed, I was so sad, when they started putting people on the certification board that were tied in with these huge industries that are in the business of genetically modified foods.</p>
<p>I am alarmed at the studies done on animals that have been given a diet of genetically modified food.</p>
<p>The industry keeps these quiet. “An estimated 75 percent of foods in U.S. grocery stores contain GM ingredients. About seven out of every 10 items in the average grocery cart have been genetically modified. And don’t bother reading labels to see if you’re buying a GM product, because no labeling is required.” (1) “What I know is that, there are two basic types of genetically engineered crops on the market now: herbicide-tolerant and insect-resistant.</p>
<p>Herbicide-tolerant crops usually include corn, cotton, sugar beets, soy, and canola. These are grown to handle the direct use of pesticides on them. There are over a billion pounds of pesticides used in the United States alone, each year. Many of these chemical fertilizers were developed for use as bombs or poisons in warfare. They poison our food and our environment.</p>
<p>Pesticides particularly affect our nervous system. Insect-resistant crops usually include corn, potatoes, soy, and cotton. These plants actually produce an insecticide to kill insects that feed on them. If this is what the genetically engineered plant is doing to a small insect, then what is it doing to the person who is eating this food? The effect of this type of plant on the environment and in the human body, especially long-term, is unknown.</p>
<p>Genetically engineered, or genetically modified (GM), plants are escaping into the wild and inter-breeding with wild plants. Our pollinators, such as bees, are in trouble now. Are genetically engineered plants a contributing factor? Good question. Genetically engineered food is such a recent food product that no long-term, in-depth studies show their long-term effect on humans or the ecosystem. You must decide for yourself if eating food that has pest control built right into it or has large amounts of poisons put on it is good for human consumption.” (2)</p>
<p>So, this November, California will vote for “the right to know” what is in their food. I am a member of a group called “ Slow Food.” The group of Slow Food USA is supporting this campaign to make these companies and the producers of genetically modified foods actually put it on the label of the food. I support this right to know. Here is a link for you to help with the campaign.</p>
<p>So, if you want to know what and where you food came from, join in and sign you name for fair, healthy, good, and clean food! If they do it in California, then we may be able to get in the other states as well. Let’s get this supported! Let your voice be heard!</p>
<p>Slow food says,” This issue isn&#8217;t just about California. With just 33 days left until election day,Monsanto, DuPont, Dow, ConAgra and other pesticide and processed food corporations have come up with $34 million to ensure you’re kept in the dark about what’s in the food you eat and serve your family. Slow Food USA stands in opposition to these forces.”</p>
<p>They also said, “At a recent event in California, Slow Food’s founder Carlo Petrini told us that passing Proposition 37 should be Slow Food California&#8217;s top priority in the next 33 days. Without taking a position for or against GMOs, he urged us to protect our right to know what we are eating. &#8220;The campaign is important for all of Slow Food,&#8221; he said. &#8220;And not only for California but for the entire United States and the whole world.&#8221; He told us all that the world is watching &#8212; can we protect our right to know?”</p>

										<content:encoded><![CDATA[<p>Do you remember having a watermelon seed-spitting contest as a child? We were actually allowed to spit something! What a silly and funny activity for the 4th of July or a picnic. The heat of the summer is the perfect time to indulge in sweet, juicy, nutrient rich watermelon. Watermelon is luscious and refreshing as a snack or as part of a fruit salad, dessert, or drink.</p>
<p>One cup of watermelon has only 48 calories, however it has high levels of nutrients, making it the perfect healthy treat. Watermelons are packed with Vitamin C, Vitamin A, Vitamins B 6 and B 1, potassium, and magnesium. In addition, medical studies have shown that watermelon can help with inflammation conditions like asthma, atherosclerosis, diabetes, colon cancer, and arthritis. It is also high in the antioxidant lycopene, which has cancer preventing properties and helps oxidize cholesterol.</p>
<p>Watermelons were originally cultivated in Africa and have been used as a source of water for centuries. The flesh is 90 percent clean, pure water, which made it a safe water source in desert areas. There are over 500 varieties of watermelon throughout the world, including in India and Egypt, where they have been cultivated since 2500 B. C. They range in weight from 5 pounds to around 50 pounds, with the largest in recorded history being a 279-pound melon from North Carolina!</p>
<p>When picking out a watermelon, make sure the surface is smooth and symmetrical, with a round or oblong shape. There should be a flat and slightly yellow place on one side where it was sitting on the ground. Take your thumb and thump the melon while listening for a rich thudding sound to ensure proper ripeness. They should be allowed to ripen on the vine; so buying your melon locally ensures it will be fresh and tasty. A watermelon can stay refrigerated for about 5 to seven days.</p>
<p>Once you have picked the perfect melon, enjoy a watermelon drink on a hot day!</p>
<h2>Watermelon Drink Recipe</h2>
<p>Cut watermelon into chunks and remove the seeds.<br />
Place it in a blender.<br />
Add a splash of fresh limejuice.<br />
Variation: Add some sparkling water and a spring of mint for a fresh cocktail taste.</p>
<h2>Watermelon Kabobs</h2>
<p>Ingredients:</p>
<p>Kabob sticks<br />
Watermelon<br />
Fruit &#8211; a variety of colorful fruit like pineapple, apple, peach, mango, cantaloupe, grapes, kiwi, banana, etc.</p>
<p>Directions:</p>
<p>Cut the fruit into thick chucks.<br />
Slide the fruits on the kabob stick.</p>
<p>(Be thoughtful as to the age of the child. Sharp sticks can be dangerous to children and you may want to sue straws instead.)</p>
<p>Serve chilled or at room temperature, as a snack, desert or appetizer.<br />
This is a fun food preparation activity that the children can help make.</p>
