										<content:encoded><![CDATA[<p><span style="font-size: 100%;">Happy Mother&#8217;s Day!</span></p>
<p><span style="font-size: 100%;">In honor of mother&#8217;s day, there may be someone making brunch for their mother today.</span></p>
<p><span style="font-size: 100%;">This is a recipe my daughter and I made together. Whole Grain Quinoa Waffles I grew up eating waffles; so I always made them for my children. Quinoa is a seed, not a grain. It is </span>gluten-free<span style="font-size: 100%;"> and a complete protein. Amanda also wanted to add some dried cranberries to the batter. They were delicious </span>in <span style="font-size: 100%;">our waffles. The cranberries are optional. We just added about a ¼ cup of them to our batter. I am going to share this delicious recipe with you.</span></p>
<p><span style="font-size: large;"><span style="font-size: 100%;"> Ingredients for about 3 (9-inch) waffles</span> </span></p>
<p>2 cups whole grain quinoa flour (sifted)</p>
<p>2 T. Xylitol (a natural sugar I like to use when the recipe calls for granulated sugar)</p>
<p>3 tsp. Baking Powder (with no aluminum)</p>
<p>¾ tsp. Sea Salt</p>
<p>1 ½ cups Coconut Milk</p>
<p>3 Eggs (separated)</p>
<p>¼ cup Coconut Oil (melted)</p>
<p>¼ cup Dried Cranberries (optional)</p>
<p>Dash Cinnamon (optional)</p>
<p>Drizzle Honey or maple syrup (optional)</p>
<p>A few tablespoons of melted butter (optional)</p>
<p><span style="font-size: large;">Directions:</span></p>
<p>1. Heat up the waffle iron</p>
<p>2. Sift the flour, sugar, baking powder and salt into a bowl.</p>
<p>3. Combine milk and egg yolks and beat in the coconut oil.</p>
<p>4. Add the liquid ingredients to the dry ingredients and stir lightly.</p>
<p>5. Beat the egg whites until they will form soft peaks.</p>
<p>6. Fold the egg whites into the batter.</p>
<p>7. Bake the waffles for about 5 minutes. ( time may vary with various waffle irons)</p>
<p>8. Serve with melted butter (optional), honey or maple syrup with a dash of cinnamon (optional) sprinkled on top.</p>
<p>Variations:</p>
<p>1.Add about ¼ cup of blueberries or banana pieces instead of the cranberries, to the batter for a fruitier version.</p>

										<content:encoded><![CDATA[<p>What do Vegetarians eat for Thanksgiving, is a question I get asked when the fall season arrives.  My answer is, we eat all the side dishes that are usually served with the dinner. They are the inviting comfort foods that have a delectable charm to them.  I put a few of these favorite holiday recipes in my book, How To Be A Healthy Vegetarian. I love Thanksgiving. It is one of my favorite holidays. I have a large family and dearly love getting to see them and catch up on what everyone is doing. With everyone coming over, the house will smell fabulous with the aroma of freshly, baked breads and casserole dishes. Since we all want to nibble a little while we are waiting for everyone to arrive, I will have some nut pate stuffed celery sticks as appetizers and some warm spiced, apple cider. When it is finally time for our meal and the blessing, we will be filling our plates with a variety of delicious foods. People traditionally like to have a chewy, meaty type of main dish for Thanksgiving that would be in place of the traditional turkey.  So, I make a Seitan Stroganoff, which is an old recipe of my mother’s that I have remade to be vegetarian. It is very hearty with a kind of gravy type of flavor and sauce. I would have a big, mixed green salad and the side dishes would be my squash casserole, Tom Spicer’s brown rice and chestnuts, stuffed tomatoes, green peas and Sweet potatoes with cranberries and apples. Then of course we have to have the traditional cornbread dressing. I make mine with my homemade cornbread recipe that is combined with vegetable broth, celery, sautéed onions and some herbs to create a wonderful cornbread stuffing. Traditionally, for the last 27 years, my mother would divide her dressing when she was making it and make one with chicken broth for everyone else and then one with a vegetarian broth for my family and me. I always appreciated that from my mother. She is so thoughtful about trying to make sure everyone is able to enjoy a festive Thanksgiving Dinner together. Then for the bread, I make my Great Aunt Katherine’s homemade yeast rolls, which are always a favorite and are the traditional bread at our holiday family feasts. Then for the grand finale, there would be pumpkin and pecan pies for dessert. I am so thankful for my family and our meals together. This Thanksgiving I will be eating these comforting foods that are my special veggie Thanksgiving feast. I hope this gives you some idea of what to serve the vegetarians that grace your table. 										<content:encoded><![CDATA[<p>One person’s weed is another person’s herb. A weed is simply a plant that is not meant to grow in a certain landscaping. But really, the rainforest is one big group of weeds (plants) that are super foods! We need to change how we look at our garden and our health. It is all a matter of perspective. I probably drive my yardman crazy, because I tell him not to cut down my dandelions and other plants that are growing wild around my yard.</p>
<p>I have almost an acre and I let all of my plants go to seed. Which means they grow until they produce seeds. I let nature take its&#8217; course and I have gardens growing all over my yard. An arugula here and a plant there. It is fun and I love seeing where my salad will pop up! I love the wildness of it.</p>
<p>Well, I hear about everyone trying desperately to kill their weeds. Dandelions are apparently one of the ones they target. I know Monsanto has had a advertising blitz and round-up weed killer developed just to stamp out the plant.</p>
<p>Well, in my garden the dandelion is one of my most treasured plants. I make tea from it, I juice it with my cucumbers and celery. I also put it in my salads. I noticed the other day that it is right next to the spinach at the Whole Foods Market. Well, dandelion is one of the most healthful plant around! Why is everyone killing it, when they should be eating it! With the high cost of food, you have a very easy to grow, inexpensive super food right in your very own yard.</p>
<p>Let me explain why dandelions are so wonderful.</p>
<p>First of all, Europeans have used it for centuries in their salads, teas and food. It has been known for helping with digestion and the liver function. It helps in wonderfully amazing ways, so why are people killing it instead of eating it? People, who have any kind of gall bladder issue or trouble producing enough bile for the digestion of food, would really benefit from drinking dandelion tea or consuming more dandelion greens. So, stop killing your gourmet salad in your yard. Go organic and harvest your weeds! Little did you know that you were actually a gardener!</p>

										<content:encoded><![CDATA[<p>In the spirit of the holidays and last week’s Thanksgiving, I wanted to share a picture and a thought about the Peace Corp and what these wonderful Peace Corps people can do.</p>
<p>My daughter lived in Mali for two years in the Peace Corp. I went to visit last spring. It was a life-changing trip for me and for her. My daughter’s thoughts and prayers have made such a large difference in the lives of the women there, and in the future of the entire village.</p>
<p>While she was there, she raised the money for the men of Bougoula to be able to build a<br />
literacy center for the women of the village, brick by brick.<br />
Carpenters came in from bigger towns to lay the roofing, cement the<br />
structure and paint it.</p>
<p>On opening day the whole village threw a big<br />
party for the literacy center and then everyone turned out!<br />
Peace Corps officials and the local mayor attended and both gave beautiful<br />
dedication speeches.</p>
<p>An excellent teacher was found, hired and trained<br />
and thirty women enrolled in three-hour classes, six days a week. With<br />
school books in hand they headed off to their first day of classes,<br />
and, beginning with the letter “I,” these thirty women took their<br />
first step on the journey toward literacy and a better future for<br />
their families.</p>
<p>As the classes went on the women grew in both<br />
knowledge and confidence, and sitting in on their classes became my daughter&#8217;s<br />
favorite part of the day. Their sense of humor and the dedication with<br />
which they pursued their studies were both inspiring and humbling.</p>
<p>It’s a fact that when a mother is educated, several things improve.<br />
There is a widespread improvement in management of household income<br />
and expenses, children’s health and healthcare information access,<br />
women’s entrepreneurial activity, and a higher rate of enrollment of<br />
young girls in school.</p>
<p>Higher rates of women’s literacy have also been<br />
linked to lower rates of child mortality, lower rates of terrorism,<br />
higher rates of employment and higher rates of gender equality. As the<br />
country with the lowest ranked literacy on earth, Mali is in dire need<br />
of adult literacy programs and training.</p>
<p>Since the Bougoula literacy center’s induction ceremony, the surrounding area has been inspired to<br />
build two other literacy centers, setting off a domino effect as literacy spreads throughout the region.</p>
<p>Many of the women now enrolled had spoken to my daughter of what a privilege it<br />
was to go to school, and how day after day they had sent their children off to school but sat at home, wishing they’d had the same opportunity. They no longer sit at home and wonder at the privilege of<br />
education; provided the tools to learn the skills they’d always lacked they’ve empowered themselves and grown by leaps and bounds.</p>
<p>Since my daughter’s departure this past summer, a local committee of women have overseen<br />
the literacy center in conjunction with the mayor’s office. One never knows the<br />
long-term implications of a such a gesture, but we may assume they are<br />
manifold in the influence they will have on these families, currently<br />
living in a country battling the provocations of terrorism and an<br />
unbroken cycle of poverty and famine in a 21st century world.</p>
<p>I always told her that she was the pebble in the pond. She was the first Peace Corps volunteer to ever live in their village. I am blessed to have her home, but I am also looking forward to going back to visit one day. Until then, I am going to order products from their women’s co-op; so that I can stay connected to her village and also help out financially.</p>
<p>I am such a proud mother.</p>
