										<content:encoded><![CDATA[<p>I hope you have had a fabulous and magical holiday with your family and friends!</p>
<p>This is one of our favorite salads to eat,  especially after holidays of rich, heavy meals. Many of my clients have made it and loved it. Now, I’m documenting it here so you can refer back to this recipe over and over again! If you haven’t tried it, it is a must!</p>
<p>I call it a detox salad because it contains a very detoxifying green leafy herb called cilantro and the spice turmeric.</p>
<p>Cilantro can help the body rid itself of heavy metals. We get metal toxins in our bodies from a variety of places including dental fillings, aluminum deodorant, the aluminum foil we use in food preparation and storage, vaccinations, cadmium from secondhand smoke, and polluted air. Metal toxins are harder to rid our bodies of than other toxins, but cilantro is highly effective in helping the body detox them. Cilantro is also a good source of dietary fiber and iron, magnesium and manganese. I love the light flavor it adds to my salad mix and this is a great way to add it to your food!</p>
<p>This salad also contains the spice turmeric, which is anti-inflammatory, increases liver function, is detoxifying, and can help regulate blood sugar. Tumeric works 1000 times better if it is combined with some oil and black pepper, so having it in a salad is wonderfully healthy!</p>
<p>My daughter, Amanda, and I like to add greens to almost all of our recipes. It makes them healthier and lighter. If we are having a rice or pasta dish, when it’s warm and ready to serve, just combine it with salad greens. It is so easy and absolutely delicious!</p>
<p>Ingredients:</p>
<p>1 c. romaine lettuce, torn into bite-sized pieces<br />
1 c. cilantro, chopped<br />
1 red pepper, seeded and chopped<br />
1/2 c. chopped tomato<br />
1 ½ or 2 c. warm, sprouted and cooked green lentils<br />
1 tsp. minced red onion<br />
1 avocado, pitted, peeled and chopped into chunks<br />
2 T. extra virgin olive oil<br />
¼ tsp. curry powder<br />
¼ tsp. turmeric<br />
unrefined sea salt to taste<br />
fresh ground pepper to taste</p>
<p>Directions: Combine all ingredients well and enjoy!</p>
<p>Note: This is also a salad you can enjoy warm or make ahead of time and store in the fridge for a few days, I love it when the flavors have a chance to meld together. Just remember to chop the avocado later right before serving.</p>
<p>Variation: You can substitute beans for the lentils.</p>
<p>This recipe makes one to two servings.</p>

<p><strong>I love smoothies. They are a fast and easy way to get super, nutrient dense food in an efficient manner. I always felt that breakfast was one of the most important meals of the day.</strong></p>
<p><strong>When my children were growing up, I made smoothies for my children almost every morning before they left for school. If they were racing out the door, I knew that they could drink this on the way to school, and it would sustain them until lunch. I didn’t want them going off without some kind of food in their stomach. </strong></p>
<p><strong> </strong></p>
<p><strong>Fruity Protein Power Smoothie</strong></p>
<p><strong> </strong></p>
<p>Ingredients:</p>
<p>1 c. fresh, organic fruit of choice (freshly pitted cherries or blueberries are good)</p>
<p>1 banana</p>
<p>1½-2 c. organic quinoa milk</p>
<p>1 scoop (4 T.) Vanilla Protein Powder</p>
<p>1 tsp. cold pressed, organic hemp seed oil</p>
<p>1 T. organic, pure coconut oil</p>
<p>2 dates, pitted and softened by soaking them in water for about 20 -30 minutes.</p>
<p>¼ tsp. fresh, soft bee pollen (optional)</p>
<p>&nbsp;</p>
<p>Directions:</p>
<p>Place all ingredients in a blender and blend until smooth.</p>
<p>Drink at room temperature immediately.</p>
<p>&nbsp;</p>
<p>Variation: Substitute a few drops of stevia or ½ tsp. of xylitol for the dates, if you have high blood sugar.</p>
<p>&nbsp;</p>
<p>Serves one.</p>
<p>&nbsp;</p>

<p>Quinoa Milk</p>
<p>&nbsp;</p>
<p>Ingredients:</p>
<p>1 vanilla bean or ½ tsp. vanilla extract</p>
<p>1 c. organic, whole (freshly-cooked) quinoa</p>
<p>2 c. non-chlorinated water</p>
<p>Stevia to taste (optional)</p>
<p>Dash of sea salt</p>
<p>&nbsp;</p>
<p>Directions:</p>
<ol>
<li>Split vanilla bean and use a sharp knife to scrape out the inside of the bean. Put scrapings in a blender.</li>
<li>Combine all ingredients in a blender and blend well.</li>
<li>Strain through a nut milk bag, or simply drink it as a thicker version. (The more quinoa you add, the thicker the milk will be.)</li>
</ol>

<p>Notes:</p>
<ol>
<li>You can omit or use an alternative vanilla flavor for this milk.</li>
</ol>
<p>Toffee or vanilla-flavored stevia (by Sweet Leaf) is one I sometimes use instead of the vanilla bean.</p>

<li>You can add a soaked date for sweetening.</li>

<p><span style="font-size: x-large; color: #000000;"><strong>How To Have A Healthy Halloween</strong></span><br />

<p><span style="font-size: medium; color: #000000;">Halloween is almost here and everyone is wondering what costume to wear and what treats to give. Careful planning can make this holiday more enjoyable than you imagined.</span></p>
<p><span style="font-size: medium; color: #000000;">Sugar is usually the treat of choice, but it is harmful to our health. Since we want to set a good example for our children, I‘ve found some truly wonderful alternatives that are enjoyable and entertaining. While children may not always appear to be listening, they are always watching, so send a consistent message that healthy eating is important—even on holidays. This can be challenging when the rest of the country is trying to eat as many pieces of candy and sugary desserts as possible.</span></p>
<p><span style="font-size: medium; color: #000000;">According to research, one teaspoon of sugar can shut down a person’s immune system for up to 5 hours.[1] Yale University says that children should get only 3 to 4 teaspoons of sugar per day and that an adult should limit intake to 5 teaspoons.[2] This is even possible on Halloween. We all benefit from avoiding going overboard on holiday occasions.</span></p>
<p><span style="font-size: medium; color: #000000;">Try to find a healthy balance for your children’s food intake and create an atmosphere of wise choices. First, before going trick-or-treating with your children or sending them to a Halloween party, serve a filling and healthy meal so that tempting sugary desserts and candy aren’t eaten simply because of hunger.</span></p>
<p><span style="font-size: medium; color: #000000;">You can also pass out non-edible treats as substitutes for candy. Try things like stickers, crayons, bubbles, kaleidoscopes, slinkies, yoyos, sidewalk chalk, small flashlights, glow sticks, hacky sacks, funny glasses, or other fun gifts. You can even pass out toothbrushes! You can find packs of these online or at the local party or craft stores. Make sure you pick age appropriate treats for children, and especially make sure that the gifts do not include small parts that a child could choke on. Some gifts may be better for smaller children, while others may be more fun or safer for older children.</span></p>
<p><span style="font-size: medium; color: #000000;">If you would prefer to hand out edible treats, try some commercially-packaged alternatives to candy like trail mixes, raisins, popcorn packets, or nut butter crackers. People will trust packages from the grocery store more than homemade items, as they are sealed.</span></p>
<p><span style="font-size: medium; color: #000000;">For a home party, you can make healthy pumpkin muffins, popcorn with nuts and raisins, or a Goblin Goulash. It is the perfect time to serve a green kale smoothie! (Which I suggest calling for a Halloween drink/treat, Goblin Goulash!) Guests will think they are having a special Halloween drink, when in reality you are introducing a healthy green drink.</span></p>
<p><span style="font-size: medium; color: #000000;">With childhood obesity on the rise at an alarming rate, literally doubling over the last 30 years, it is good to be someone who isn’t contributing to the sugar disease epidemic. You’d be surprised how much all of us enjoy an alternative to the sugar laden candy that is so common.</span></p>
<p><span style="font-size: medium; color: #000000;">If your child goes trick-or-treating, instruct your child to wait and allow you to inspect the food they collect before they eat it. Tell them that if any candy or food they received isn’t wrapped professionally (commercially), they should throw it away, especially if it looks like there is any kind of tampering (tears, holes, discoloration, etc.) with the package. I always threw out any kind of candy or treat that my children were given that looked suspicious in any way. Don’t take a chance, just throw it out if there is doubt.</span></p>
<p><span style="font-size: medium; color: #000000;">If you allow your children to eat candy or treats, be aware that some have a shelf life. If you are allowing your child to have one or two pieces per day, check the candy for freshness or an expiration date before he or she can have it. Teach your children to do this as well. Children can be very responsible if given the chance.</span></p>
<p><span style="font-size: medium; color: #000000;">Children’s <a href="https://www.idevaffiliate.com/32863/564.html" target="_blank" rel="noopener noreferrer external" data-wpel-link="external">teeth and gums are damaged by sugar. Dental decay can be painful and damaging to a child’s health.</a> Conditions like this can challenge a person for their entire life. Help your children make the best decisions for their health now. <a href="https://www.idevaffiliate.com/32863/564.html" target="_blank" rel="noopener noreferrer external" data-wpel-link="external">Make certain they brush and floss after consuming sweets.</a> Your children will always be grateful for the love you show them. They may not show it today, but they will recognize and appreciate it more as they grow older.</span></p>
<p><span style="font-size: medium; color: #000000;">For Halloween, spend time together, play fun music, bob for apples, make jack-o-lanterns, and bake pumpkin bread or other items that benefit your family’s health. This shows your family how much you really care about them. May you have a fun, safe Halloween holiday.</span></p>

										<content:encoded><![CDATA[<p>Nutrition Facts labels are finally getting a much needed remake. I’m so glad, because I always found this label to have things on it that weren’t really relative and somewhat deceptive. The proposed update, was announced in March. This is the first major revision in 20 years. I’m guessing this is part of the first lady’s continuing efforts to address the obesity epidemic and to help Americans improve the eating habits. The new label is under review and is awaiting final approval. The new labels will be required in a few years; so you won’t see the new label immediately.</p>
<p>So, what does the new label entail?</p>
<p>First- Serving sizes will be more reflective of what is the actual amount people consume of that product. I’ve always thought it was strange that they could manipulate the serving size in order to make it appear as if there was less sugar than it actually has in the amount you are consuming.</p>
<p>Second- They are removing the calories from fat. They are finally acknowledging that it’s the type of fat that is important not the amount of fat.</p>
<p>Third- They are finally are finally addressing the “added” sugar in foods. There are natural sugars in food, like fruit or milk. Then there are “added” sugar that are added to the product during processing which contribute to weight gain. They are putting the “added” sugar on the label! One teaspoon of sugar can shut down the immune system for up to 5 hours. So, knowing how much &#8220;sugar&#8221; is in the food is incredibly helpful for anyone needing to maintain a healthy immune system.</p>
<p>Fourth- Vitamin D and potassium are being added to the label. These nutrients are vital to maintaining a range of health benefits, like maintaining a healthy blood pressure or bone health. So, they are finally putting them on the label in hopes that it can help people purchase more health providing foods.</p>
<p>These new guidelines aren’t perfect, but they are a change for the better. I’m still wishing they wouldn’t allow trans fats or artificial sweeteners to be added in such small amounts (less than .5 grams) to a serving that they can claim 0 grams. I feel that is very deceptive. So, just be aware that they are able to do this to the products without listing those ingredients on the label when it is in such small amounts. I feel that even in these small amounts they can be harmful to the body.</p>
<p>So, with that said, it is a step in the right direction and I’m happy to see changes being made to help people see what is actually in the foods. I always say, take your reading glasses with you and read the labels. Buy from companies you know are reputable and use high quality ingredients. When in doubt, don’t buy it. It’s always best to eat whole real food in its natural state. Then you really know what you are eating. B<em>on appétit!</em></p>

<p>Time for my morning power smoothie with cherries! I think breakfast is one of the most important, if not the most important, meal of the day! </p>
<p>Also, cherries are in season. Our bodies are also better equipped to handle the foods that are in season. I love going to the local farmers market and buying food at the peak of the season. When we eat what is in season, the food is fresher and less expensive. I love to eat locally, seasonally and organically.</p>

Finally, a book that I can recommend to my patients without reservation. It is concise, well-written, and easy to follow.<br />
Patients and consumers alike are inundated with the number of books, articles, and marketing that surround our eating habits.<br />
This book easily puts the fundamental concepts into one place that anyone can understand and utilize. The recipes are tasty and can be made with relative ease.<br />
<strong>For anyone wanting to make a positive and healthy change in their eating habits and their health this is the book for you!</strong></p>

<strong>&#8220;How To Be A Healthy Vegetarian&#8221; is an excellent book. Having had the opportunity to assist and promote health and nutrition with world-class athletes over the last 25 years; it is my opinion that Nancy Addison&#8217;s book is a formula for high-level performance in our daily lives. I can&#8217;t imagine a more informative book for the person looking to improve their health.</strong> The chapter about sugar is the most complete information available. Nancy is an expert in Nutrition. What you put on the end of your fork is more powerful medicine than anything you will find at the bottom of a pill bottle.&#8221;</p>

<p><strong>Two years ago I had a quadruple bi-pass, and my cardiologist told me that if I changed to a plant based diet, I would never have this problem again. Being from Texas, I grew up on meat and potatoes, and I was not compliant with his advice. I came across Nancy Addison&#8217;s book and it made perfect sense to me with the simple and understandable approach. I&#8217;m started off dropping all animal meat, including chicken, which has as much unhealthy fat as steak. Within a month I dropped 17 lbs, just doing that. My system is functioning a lot better, I&#8217;ve added more fruits and vegetables, and doubled my energy. I haven&#8217;t given up seafood, but maybe down the road I will take the next step. Brava Nancy for getting me to take the first step,and helping me create a new,healthier life!!!!!</p>

The thing I love about this book is it is clearly written and easy to understand! I&#8217;ve purchased so many books in the past that were supposed to be written for beginners in the vegetarian lifestyle, but ended up being geared toward people who were either scientists or well versed in what vegetarianism entails (when that was not what I was looking for or how it was marketed) and they didn&#8217;t do me much good! BUT <strong>THIS BOOK IS THE REAL DEAL! Reading it made me feel like the writer was personally guiding me through the things that are important for me to know. And it is full of a whole bunch of great (and easy) recipes too!</strong> I know several teens in my family who are experimenting with vegetarianism and I will be purchasing several copies of this book, so they will learn to do it in the right way from the beginning. Actually, it would make a great gift for anyone thinking about trying to become a little healthier by incorporating a few more vegies into their diet!&#8221;</p>

This is a wonderful book. This information and recipes that Nancy has included was instrumental in getting back on the path of being healthy. Me being a vegetarian, well honestly I&#8217;m not all there yet&#8230; but I&#8217;m not done yet.<br />
It&#8217;s still a challenge, but after reading her book, I am making better choices in food that I do eat. Using the choices and new recipes has and is instrumental in my weight loss too. It&#8217;s a great lifestyle change book and she goes in depth explanation of the benefits why we should change our diet.</p>
<p>I&#8217;ve been known carried this book into the groceries stores with me when I have shop. I buy organic foods and most of its all vegetables and then learning how to prepare them. It&#8217;s all in the book.</p>
<p>Our most important asset is our body and our health. So we need to get serious and Nancy puts in easy reading form what we need and how it works and how to do it.</p>

<p>Celebration Magazine has a new health and nutrition column and it is written by Chef and Nutrition Expert Nancy Addison and Academy Award-Winning<br />
Documentary Filmmaker, Maryann De Leo. They recently released their book, Alive<br />
and Cooking &#8211; An Easy Guide to Health for You and Your Parents, which<br />
provides more than 100 easy, healthful, and budget-friendly recipes,<br />
health tips and shopping resource guide to aid all in creating a<br />
nutritional plan best suited for older adults.</p>
<p>What a great month to start our column!  The month we celebrate love,<br />
cooking is love &#8211; expressed through food.</p>
<p>Leeann Lavin, who wrote the forward to our book, said, “Food is love.&#8221;</p>
<p>We could not agree more! We’d like to think as food as the celebration<br />
of life and love!</p>

You can make these into small snack bars as well. Make sure to store these cookies in the refrigerator.</p>

<p>Raw recipe</p>
<p><strong>ALMOND COOKIES</strong></p>
<p><strong>Ingredients:</strong><br />
2 c. almonds, soaked in water 12 to 18 hours, or almond meal<br />
1⁄2–1 tsp. sea salt<br />
1⁄2 c. or more honey<br />
1⁄4 c. almond butter<br />
2 T. protein powder<br />
1⁄2 c. organic, raw, shredded coconut</p>
<p><strong>Directions:</strong><br />
1. Grind almonds and sea salt into a fine meal.<br />
2. Slowly add honey, almond butter, and protein powder to make<br />
sticky dough.<br />
3. Roll dough into round long logs.<br />
4. Roll logs in coconut.<br />
5. Wrap logs in parchment or wax paper and then in foil. 6. Chill until firm.<br />
7. Cut slices a little over one-quarter-inch thick.</p>
<p><strong>Note:</strong><br />
I use Garden of Life brand protein powder.</p>
<p><strong>Variation:</strong><br />
Gently press cookies in coconut after they are sliced, for a more coconut-y flavor.</p>

<p>Here is one of my favorite raw, healthy recipes from my cookbook, which has over 115 yummy and easy recipes in it. The book can help you lose weight, boost your immune system, get your libido healthier, make non toxic body care and home care products with organic food and gardening tips.<br />
I thought I would share it with you!</p>
<p>Raw, vegan recipe</p>
<p>SUPER CHOCOLATE POWER SMOOTHIE</p>
<p>Yes, you can have chocolate for breakfast and it will be healthy! Cacao is one of, if not the top anti-oxidant foods in the world. It is nutrient- dense.</p>
<p>Note that if you’re making this drink for someone who is diabetic, sweeten it with stevia instead of dates.</p>
<p>Ingredients:<br />
2 1⁄2 c. coconut or hemp milk<br />
1 or 2 bananas<br />
1 T. cacao powder or cacao nibs ( you can save some to sprinkle on top)<br />
2–3 dates, pitted and soaked in water for an hour or more or if you are diabetic &#8211; use a half dropper of toffee flavored stevia<br />
1 T. nut butter of choice (sunflower seed, pumpkin seed,peanut, or almond)<br />
1 tsp. chia seeds<br />
1T. extra-virgin, pure coconut oil<br />
1 scoop protein powder <a href="http://www.healthrangerstore.com?utm_source=HR_Affiliate&amp;utm_campaign=14708&amp;utm_affiliate=301058&amp;rfsn=301058.3335590" target="_blank" rel="noopener external noreferrer" data-wpel-link="external">( I use one from Mike Adam&#8217;s store.)</a></p>

1. Blend all ingredients well in a blender and enjoy!</p>

										<content:encoded><![CDATA[<p>Everyone seems to want healthy hair. We want our hair to be growing healthier and thicker naturally. Sometimes we may find too much hair left in our hairbrush or that our hairline is looking a bit farther back than it seemed a few weeks ago. I notice many people these days with balding spots (women and men). I also get asked quite often by clients or friends about how they can have healthier hair. Because of this, I will expand on ways people can have healthier hair by using foods and supplements that are natural and effective.</p>
<p>Our hair can definitely be influenced by what we are consuming. In many cases, hair loss is the result of a deficiency of Vitamin B and other nutrients. Lack of the right kind of essential fatty acids can also be part of the equation.  A lack of Vitamin B&#8217;s (especially B6 and folate), magnesium, sulfur, zinc, and collagen, that the body needs in small amounts to function and stay healthy can result in hair thinning or hair loss.</p>
<p>The combination of nutrients is what is important, including eating the right kind of complex amino acids (proteins) in the right amounts. Foods rich in B vitamins are brewer&#8217;s yeast, wheat germ, and lecithin. Beans, lentils, peas, legumes, and seafood are also high in protein and B vitamins.</p>
<p>There are also many vitamins that contribute to healthy hair. Zinc is one of those. It works in cell reproduction and hormone balance, affecting hair growth and taking care of the hair follicles. If the body is low on zinc, the hair follicles can become weak. Foods heavy in zinc are seafood and nuts.</p>
<p>Vitamin E is another important element of healthy hair, having been shown to improve scalp circulation because of its anti-cellular aging and increased blood oxygenation properties. Avocados, kiwi fruit, nuts, seeds, and olive oil are good sources of vitamin E.</p>
<p>Vitamin A&#8217;s protection of hair follicles has been documented, and can be found in carrots, spinach, and unrefined cold pressed seed oils, such as flax, walnut, pumpkin.</p>
<p>Essential fatty acids are another vital way of promoting healthy skin and hair. Some essential fatty acid sources are hemp seeds, flax seeds, walnuts, avocados, almonds, pecans, pumpkins, hazelnuts, pine nuts, sesame, olives, chia seeds and their respective oils.</p>
<p>I try to get at least 1 teaspoon of the equivelent of the essential fatty acids, omega-3 oil into my diet every day. I keep the cold pressed, organic hemp or flax seed oil in my refrigerator and use it that way. It is easy and you get more of the oil directly into your system that way. My favorite way to add these omega-3 foods or oils to my food is to put the oil or the fresh nuts or seeds to salads, smoothies, casseroles and soups.</p>
<p>Although it is best to get nutrients in a whole food form, all of these vitamins and minerals can be found in supplement form. When buying supplements look for organic whole food vitamins. Your body can read whole foods much better than it can an isolated vitamin. Also, the Organic Consumers Organization recommends looking for products that contain &#8220;100 percent plant-based&#8221; or &#8220;100 percent animal-based&#8221; on the product&#8217;s label, so you know you aren&#8217;t getting synthetic vitamins. I recommend avoiding synthetic vitamins.</p>
<p>I also use a supplement that improves my hair health in many ways. It restores collagen on a cellular level. It has been found to help people&#8217;s hair grown back. We stop making collagen in our twenties, so we become depleted over time.</p>

										<content:encoded><![CDATA[<p>New Years Day is here and many of us will be having the meal consisting of black-eyed peas. The black-eyed peas are known to represent &#8220;good luck&#8221;. This tradition began in the southern states after the Civil War. The northern troops, especially who were serving under General Sherman, would destroy all foods, crops, and livestock that they couldn&#8217;t carry with them.</p>
<p>The crops of &#8220;&#8216; field peas&#8221; and corn were considered by them to be only good for animal food, were left undestroyed. There were many people in the south that survived the war because of this misunderstanding. Thus giving them a &#8220;good luck&#8221; reputation. The peas are meant to represent coins.</p>
<p>Mustard greens or collards are usually served with the peas to represent paper money. In the south, corn bread and rice are usually accompaniments for this meal. This tradition has spread throughout the country.</p>
<p>The common commercial pea we see today is the California black-eyed pea. It is pale with a prominent black spot. This highly nutrition legume was promoted by George Washington Carver. It was valuable as a crop, because it adds nitrogen to the soil. It is such a highly nutritious legume. It is high in calcium, folate and vitamin A, as well as a great source of fiber. The blossoms produce large amounts of nectar; so they are grown in many places where honey is produced.</p>
<p>The large amount of pollinators that consume this nectar makes the use of pesticides much more strictly regulated. I always suggest buying organically grown foods, when possible.</p>
<p>Cooking legumes is really very easy. Many people don&#8217;t like to eat legumes, because they think it is hard to digest and produces gas. There are a few tricks to cooking that help with the digestibility of the legumes. Soaking in purified water and draining before cooking helps break down the enzymes. I also, add some seaweed to my mixture as I cook them.</p>
<p>I add a piece of Kombu seaweed. It helps to further break down the enzymes so the legumes are more easily digestible. You can add a 3 or 4 inch piece of seaweed to the soaking water and then also keep it in the cooking water. Seaweed adds many nutrients to the food. You can discard it after cooking. Always sort, wash and drain your beans before soaking. Beans double in volume when cooked, so cook one cup if you need two cups.</p>
<h3><strong>Recipe </strong></h3>
<h3><strong>Basic Black Eyed Peas</strong></h3>
<p>1. Soak black-eyed peas overnight (or for at least 8 to 12 hours) in purified water with a small 3-inch piece of Kombu seaweed (optional). Have at least two inches of water covering the legumes, because they expand while soaking. (Soaking them will remove enzyme inhibitors and phytic acid and make them more digestible.)</p>
<p>2. Drain off the water.</p>
<p>3. Put the black-eyed peas and Kombu in a large pot of fresh purified water. Make sure you put in enough water to cover them well. The legumes will absorb large amounts of the water.</p>
<p>4. Bring the pot to a boil and drain again.</p>
<p>5. Put more water in the pot and cover the beans completely once more. Bring to a boil, skim any foam off, cover and lower heat to a simmer.</p>
<p>6. Add a little pure coconut oil (about 1 Tablespoon) and a little unrefined sea salt (to your taste) to the pot. The oil makes the dish more savory and the salt adds minerals to the dish. Then simmer the peas until they are tender.</p>
<p>Enjoy a nutritious healthy New Years Day meal with the traditional black-eyed peas.</p>

<p>I love to make miso soup as an afternoon power pick-me-up soup.</p>
<p>The miso is high in protein and is rich and delicious.<br />
Yield: 4-5 servings</p>
<p>Ingredients:<br />
4-5 cups of water<br />
1 Tablespoon sea kelp flakes<br />
1 cup sliced fresh mushrooms<br />
1-2 cups thinly sliced vegetables of your choice<br />
2-3 teaspoons miso<br />
2 scallions, finely chopped</p>
<p>Directions:<br />
1. Place water and sea kelp in a soup pot and bring to a boil.<br />
2. Add root vegetables first and simmer gently for 5 minutes or until tender.<br />
5. Add green leafy vegetables and mushrooms and simmer for 2-3 minutes.<br />
6. Remove about 1/2 cup of liquid from the pot and dissolve miso into it. Return it to the pot.<br />
7. Reduce heat to very low; do not boil or simmer miso broth.<br />
8. Allow soup to cook 2-3 minutes.<br />
9. Garnish with scallions and serve.</p>
<p>Note:<br />
Any combination of vegetables can be used in this soup. Here are some good combinations:<br />
1. Onion- daikon: cleansing<br />
2. onion-carrot-kale, mildly sweet<br />
3. leek-corn- broccoli: good in the summer months.<br />
4. onion-winter squash- cabbage: great in wintertime.</p>
