Cucumber Soup Recipe - Gluten-free & Plant-based, by Nancy Addison, organic healthy life

This is an easy, delicious, and refreshing soup to serve cool, on a warm summer day. I have frequently served this to guests when they arrive at my home!

Cucumbers are especially good because they contain a “hormone needed by the beta cells of the pancreas to produce insulin. The enzyme crepsin in cucumbers is targeted toward breaking down excessive protein in the kidneys.” (1) Cucumbers have an amazing amount of nutrients in them. They can be used extensively in a healthy and healing eating plan!

Ingredients

1 Avocado (peeled and the seed removed)

1 Cucumber ( I cut into chunks, but leave the skin on)

4 T. Dill weed ( fresh is best, but dried works also)

2 teaspoons Lime or Lemon juice

½ teaspoon Mineral-rich, pink Salt

¼ cup Pure, Mineral-rich Water

Directions

1. Blend in blender until smooth and creamy. (If it is too thick, add some more water.)
